[hotfix] Improve test coverage of UnalignedCheckpointsInterruptibleTimersTest

Small test improvement. Previous version was overloading more methods, and for example bugs in the orginal #open method would not be covered by the old version of this test. Bugs like for example logic of handling ConfigOptions.
